Family Friendly Recipe: Tofu Mac and Cheese

My kids have been enjoying this since they were toddlers. Quick, easy-to-make meal for weeknights, rainy days or whenever the mood strikes for a warm bowl of mac and cheese. Hope you like it as much as we do.  

Below recipe serves 4-6

Ingredients

  • 1 pound of macaroni

  • 1 pound silken tofu

  • 1/3 cup plain whole milk yogurt

  • 2/3 cup of whole milk

  • 8 ounces of cheddar cheese

  • 2 tbsp of unsalted butter

Directions

In a food processor, add tofu and pulse until its a grainy texture.

Pour in yogurt, milk and cheddar cheese and process until its smooth.

Cook macaroni according to package and drain.

Add butter to drained macaroni in pot and let it melt (no heat needed)

Add in the cheese sauce and stir until melted, about 5 minutes

Add salt and pepper to taste.

Feel free to use this as a base and make variations to it, like adding peas, corn, or bacon. You could even add toasted breadcrumbs and/or panko for a crunchy topping or some red pepper flakes for some heat. Enjoy!
